2 teaspoons honey
2 teaspoons Dijon mustard
2 tablespoons lime juice
½ teaspoon lime zest ᶲ
½ teaspoon kosher salt
¼ cup olive oil
¼ cup vegetable oil
2 teaspoons fresh thyme, chopped *
½ jalapeno pepper, minced
In a bowl, whisk together the honey, mustard, lime juice, zest and salt. Gradually whisk in the oils, until blended. Add the thyme and jalapeno, and mix to combine. Let the dressing sit at least 30 minutes before serving to allow the flavours to combine. Mix well before using.

Okay folks, I leave today for the “City by the Bay”! I’m in town at a trade show for the gourmet food industry.
